I haven't played many RPG's for 360, but I can say that Elder Scrolls Oblivion is one of the best most likely. Graphically, it does very well for a game it's size, and there's a whole world to explore, where you can buy houses, customize weapons and armor with enchantments, be the good guy or the bad guy, dungeon crawl, and more. While there is no online play, the vastness of the game, and the ability to simply roam the land really makes up for it. There are quite a few extra downloads as well!
